Pumpkin Oatmeal (from Deceptively Delicious - she just calls it "oatmeal")
In a small saucepan, combine these ingredients:
1 cup nonfat milk
1/4 cup packed brown sugar
1/4 cup canned pumpkin or sweet potato puree (I used pumpkin, of course!)
1 tsp. vanilla (says it's optional, but I always love vanilla!)
1/4 tsp. cinnamon or pumpkin pie spice
If desired:
add 2 tsp. natural peanut butter (YES - this is what makes Aidan like it)
dried fruit or nuts (added raisins to our bowls, but not to Aidan's - he likes raisins, but I wanted to keep it simple for now)
She suggests serving it with maple syrup, but I think it's sweet enough and skipped the extra sugar.
Aidan served it to himself the past two days and when I asked him this morning if he wanted waffles or oatmeal, he said, "meal." Yippee! I know with the brown sugar, it's more like a treat... but at least he's eating oatmeal, which has been on his hate list for awhile.

I am making these pumpkin spiced lattes. Just like Starbucks but I control the calorie count and I can make it at home while I'm still in my jammies.
